Can anyone provide step by step instructions, how to compile bitcoin wallet for MacOS / XOS on an Ubuntu 16.04 or 18.04 machine?

There are cross compilation (using the depends system) instructions available here.

What @fanquake said. Make sure you get the MacOSX-SDK (ask on IRC, create your own with a Mac and Xcode,... or look for a download). The alternative is using gitian (which uses also the depends builds under the hood).
