Increase version number after bitcoin core update https://github.com/bitcoin/bitcoin/pull/34422. Also update version history and documentation.

Maybe use this: v7.0...v8.0

It's a good idea and I actually had that initially, but the problem is when there are a lot of commits between versions, github shows the older commits and cuts off the newer ones so you can't see latest changes in the tag. The current links make it a lot easier to find the date and PR number of the most recent change in the tag, which is the thing you usually need to check compatibility.
